This is a perfect Fall soup. It’s hearty without being too heavy. The broth is delicate and light, but packed with flavor from the garlic, smoked paprika and umami spices. I used Linguica, a Portuguese sausage flavored with paprika and garlic, but feel free to use what you have on hand or can get at your grocery store.
Linguica Lentil Soup Recipe
1 lb Linguica, diced
1-2 Medium Onions, diced
2-4 Garlic Cloves, minced
Smoked Paprika
Umami Spice
Salt & Pepper
2 Bell Peppers, diced
6-8 Carrots, diced
In heavy bottom soup pan over medium heat, saute linguica until lightly crispy. Add onions and garlic, saute until soft. Add spices, and saute until fragrant. Add peppers and carrots, mix well to coat with spices and lightly saute.
2-3 C Lentils, rinsed
8-10 C Broth or Stock
Add lentils and stock. Bring to a boil, reduce heat, cover, and simmer for 20-30 minutes, until lentils are cooked and soft.
Toppings You Can Serve With The Soup
Spinach, chopped
Avocado, diced
Cilantro, minced
Scallions, diced
Feta Cheese, cubed
Serve soup, put a handful of spinach in the bowl, spoon the soup over the top to lightly wilt the spinach. Then top with avocado, cilantro, scallions, and cheese. And Enjoy!
